     Bordelaise Sauce

Ingredients
1 c. red wine
1/3 c. finely chopped shallots
1/2 tsp. thyme
1 c. brown sauce (see recipe in this book)
1 T. Cognac
1 tsp. lemon juice
Salt & Pepper
 

Instructions
Combine wine, shallots, and thyme. Cook over high heat until reduced to 1/2 c. liquid. Strain into 1 cup brown sauce. Add Cognac and lemon juice. Simmer 3-5 minutes. Season to taste. Use on steaks, lamb, or roasts.
