     Pecan Tarts

Ingredients
PASTRY
1 stick of butter softened
3 oz. cream cheese at room temperature
1 cup flour
FILLING
1/2 cup packed brown sugar
2 tbsp. melted butter
2 eggs slightly beaten
 
1/4 tsp. vanilla
pinch of salt
1/2 cup finely chopped pecans

Instructions
CRUST- In a small bowl cream butter and cream cheese.
Add flour till it becomes a soft ball. Do not overmix. Refrigerate one hour.
Divide into 30 walnut size balls. Roll into balls and form crusts in mini-muffin pans.
FILLING- In a small bowl melt butter. Add brown sugar. When mixed add remaining ingredients except for pecans. Spoon into shaped pastry cups until half full. Bake 20 minutes at 375 degrees.
