LET MEAT STAND AT ROOM TEMPERATURE FOR AT LEAST AN HOUR
HEAT OVEN TO 375
SPRINKLE WITH SALT AND PEPPER
PLACE FAT SIDE UP IN SHALLOW PAN WITH NO COVER OR WATER
COOK 1 HOUR then TURN OFF HEAT
DON’T OPEN OVEN DOOR UNTIL READY TO SERVE
COOK AT 375 30-40 MINUTES BEFORE SERVING TIME
OPEN DOOR, CARVE AND SERVE.
MAKES A PERFECT MEDIUM RARE ROAST EVERY TIME!
