     Gingerbread with Fresh Fruit Sauce

Ingredients
2 c. flour
1 tsp. baking soda
1 tsp. ginger
1/2 tsp. cinnamon
1/4 tsp. salt
1 c. molasses
1/2 c. butter, softened
2 eggs
1/2 c. milk
 
1 c. green grapes, halved
1/4 c. molasses
1/4 c. firmly packed brown sugar
1 T. cornstarch
1 c. orange juice
2 T. butter
1 tsp. grated orange peel
11 oz. can mandarin oranges, drained
8 oz. can pineapple chunks, drained

Instructions
Heat oven to 350 degree. Grease 9-inch springform pan. In medium bowl, combine flour, baking soda, ginger, cinnamon, and salt. Set aside. In large bowl, combine 1 cup molasses, 1/2 c. butter, and eggs; mix well. Alternately add dry ingredients and milk, beginning and ending with dry ingredients; mix well. Pour into prepared pan. Bake for 35-45 minutes or until toothpick inserted in center comes out clean. Cool in pan for 15 minutes. Remove sides of pan; cool on wire rack.
In medium saucepan, combine 1/4 c. molasses, brown sugar, and cornstarch; mix well. Gradually stir in orange juice. Bring to a boil. Cook over medium heat for 5 minutes until thickened, stirring constantly. Remove from heat. Add 2 T. butter and orange peel; mix well. Carefully stir in fruit. Spoon warm sauce over slices of gingerbread.
