3/4 tsp. Thai red curry paste (we used Thai Curry brand)
1/3 c. creamy peanut butter
2 T. hoisin sauce
2 tsp. dark brown sugar
2/3 c. water
1 T. fresh lime juice
Instructions
Heat the oil in a small saucepan. Add the shallots, garlic, and curry paste and saute over medium-low heat for 3 minutes.
Stir in peanut butter, hoisin sauce, brown sugar, and water. Bring to a boil and simmer for 1 minute. Stir in lime juice and let cool slightly. Serve warm or at room temperature.
