     Pheasant with Sauerkraut

Ingredients
3 tsp salt
3//4 tsp black pepper
2 lbs sauerkraut drained
1/2 cup diced onion`1 cup grated potatoes
1/2 tsp caraway seeds
2 cups beer
1 cup sour cream
4 Tbsp butter
 

Instructions
Clean wash and dry one pheasant , cut in half; season with 2 tsp salt and 1/2 tsp pepper.
Combine the sauerkraut, onion, potatoes, caraway seeds, beer, sour cream, and remaining salt and pepper in a Dutch oven or casserole. Cover and cook over low heat 1 hour. Brown the pheasant in the butter and place over the sauerkraut. Cover. Bake in a 350 degree oven 45 minutes or until pheasant is tender.
