     Bran-Wheat Refrigerator Muffins

Ingredients
2 large shredded wheat biscuits
1-1/2 c. boiling water
1 c. butter
1-1/2 c. sugar
3 eggs
1 T. baking soda
3-1/2 c. flour
1-1/2 c. buttermilk
2-1/2 c. whole bran cereal
 
1 tsp. salt

Instructions
Place shredded wheat in a bowl. Pour boiling water over wheat and let stand until cool, about 15 minutes.
Meanwhile, in large bowl, beat butter and sugar at medium speed with electric mixer until creamy. Beat in eggs, one at a time. Beat in wheat and water mixture. Add soda and flour; beat until blended. Mix in buttermilk, then stir in bran and salt. If made ahead, store in an airtight container in refigerator up to one month.
To bake, fill greased muffin cups to top with batter. Bake 20-25 minutes in a 400 degree oven until tops are browned and a wooden pick inserted in center comes out clean. Turn out of pans onto racks. Serve warm or cool.
