Cook bacon until lightly browned, 6-7 minutes. Add onions and garlic; saute over moderate heat 5 minutes. Add cream, thyme, cardamom, celery seed, and nutmeg. Bring to a simmer; stir in 1/2 tsp. salt.
Pour hot cream mixture over bread cubes. Fold in remaining salt, egg yolk, parslet, and pepper. Chill completely.
