     Norwegian Potato Flat Bread (Lefse)

Ingredients
2-1/2 pounds of baking potatoes
•1/2 cup unsalted butter
1/2 cup whipping cream
1-1/2 Tablespoons sugar
1 teaspoon salt
1-1/2 cups flour
Soft butter and sugar (white or brown)for serving
 

Instructions
1.Peel and boil potatoes. Drain and cool. 2.Put potatoes through a ricer or mash. 3.Beat in butter, cream, sugar and salt. 4.Refrigerate uncovered. 5.The next day add flour. 6.Stir well. 7.Divide into 20 pieces. 8.Heat grill or pan. 9.On a floured surface roll out the balls into circles as thin as possible. (Women often used wooden sticks from a window shade to transfer the lefse to the griddle. Hmmmm, I remember being spanked with one of those.) 10.Cook on each side of the ungreased pan. 11.Stack between towels. 12.After they are cool. stack them together, fold in half and place in a large plastic bag. 13.As needed, butter and sugar a circle. 14.Fold in half and butter and sugar again. 15.Fold once again and cut the quarter in half. 16.Some people butter, sugar and then roll
