     Roasted Broccoli

Ingredients
2 heads of broccoli, cut up
1 1/2 t kosher salt
1/2 t pepper
1/2 t crushed red pepper
2-3 T olive oil
3-4 garlic cloves
 

Instructions
Move oven rack to the top position and preheat oven to 425 degrees. Cut up broccoli (into the size bits you would find on a veggie tray) and put in a bowl. Dice/Mince garlic cloves. Toss all ingredients together and spread on a foil lined baking tray.
Bake for 20-25 minutes - pull out when the tops of the broccoli are starting to brown.
A delicious variation is to add grated Parmesan cheese, romano cheese, or nutritional yeast after about 10 minutes of baking time. Excellent addition - make sure to reduce the salt if you do that as the cheese brings it's own salt to the mix.
