      Andrea’s Summer Salad

4 tomatoes
1 cucumber
1 can of corn
1 can of black beans
1 cup edamame
1 medium sized red onion
Juice of one lemon (or mix the juice of half a lime and half a lemon)
1 tablespoon balsamic vinegar
1 tablespoon olive oil

Whisk together the lemon juice, vinegar, oil, salt, and pepper in a bowl. Dice the onion and mix it with the dressing. Cut the tomatoes and cucumber into small squares and add them to the bowl. Add the corn, black beans, and edamame and mix all ingredients together. Let all ingredients marry for at least 30 minutes. Enjoy!
