     Pea Salad

Ingredients
6oz. snow peas, bud & strings removed
5 lbs. frozen baby peas, thawed but not cooked
4 oz. red onion, 1/4 inch dice
1-1/4 lbs. bacon, 1/4 inch dice, cooked crisp, lightly drained
1/2 lb. water chestnuts, sliced
3/4 c. mayonnaise
3/4 c. sour cream
1 tsp. white pepper
1 tsp. kosher salt
 

Instructions
Blend together mayonnaise, sour cream, pepper, and salt.
Combine snow peas, baby peas, water chestnuts, bacon, and red onion with dressing until well coated.
Transfer to a clean flat container and refrigerate at least 24 hours before serving, stirring twice each day to redistribute dressing.
