     Picnic Salami

Ingredients
4 lbs. ground beef
1/4 c. curing salt
2 T. liquid smoke
1-1/2 tsp. garlic powder
1-1/2 tsp. ground black pepper
4 pieces of 12x18inch piece of nylon netting
kitchen twine
 

Instructions
Combine beef, salt, liquid smoke, garlic powder, and pepper. Cover and chill 24 hours.
Divide mixture into 4 equal portions. Shape each portion into an 8 inch log. Place on 12x18 piece of nylon netting. Roll tightly and tie ends with kitchen twine.
Place on broiler rack and bake at 225 degrees for 4 hours. Remove from oven and take off net. Pat rolls with paper towl to absorb fat. Cool, wrap in foil, and refigerate or freeze.
