     Berryhill Cheddar Broccoli Soup

Ingredients
2 gallon half & half
2 lbs. shredded cheddar
2 leeks, halved and thinly sliced
3/4 c. chopped onion
2 stalks celery, finely chopped
2 cubes butter
2-3 cloves garlic, minced
Salt and pepper to taste
Arrowroot for thickening
 
4 c. broccoli flowerets, steamed crisp-tender

Instructions
Melt butter in large stock pot. Saute leeks, onions, and celery until softened. Stir in half & half and cheddar. Simmer for 30 minutes. Strain out solids and return to stock pot.
Stir in broccoli and heat through. Serve in bread bowls or with crusty french bread.
