2 c. frozen or canned veggies (corn, peas, green beans)
1 T. flour, corn starch, or arrowroot
1/2 tsp. salt
1/2 tsp. pepper
1 tsp. oregano
1/4 tsp. garlic powder (or 1 clove minced garlic)
1 c. grated cheddar cheese
Instructions
Preheat oven to 350 degrees. Steam carrot slices in microwave for 3-4 minutes
until tender. Brown ground beef and onion in large skillet. Remove excess fat.
To the meat, add the steamed and drained carrots and other veggies of choice. In
a small bowl, stir together the beef broth, Worcestershire, tomato paste, flour,
garlic, and salt & pepper. Stir into meat mixture.
Pour meat mixture into a large casserole (or two smaller casseroles if you'd like to
freeze one for later). Top with prepared mashed potatoes to form a top crust. Dot
mashed potatoes with butter. Bake at 350 degrees for 30 minutes. Remove from
oven and top with grated cheddar. Bake 5 minutes more until cheese is bubbly.
Note-
This works well in a deep dish 10 inch pie plate to serve in wedges. This is also a
great make ahead meal for vacation/camping. Just heat and eat!
