3 Roma tomatoes, cut into wedges

1 red onion, sliced very thin

1 c. black or greek olives, sliced

1 c. crumbled Feta cheese
|
|
4 hard boiled eggs, cut in wedges

1 c. cooked salad shrimp
|
|
3/4 c. olive oil
|
|

|
3/4 c. red wine vinegar
|
|
1 tsp. salt
|
|
1 tsp. pepper
|
|
1/2 tsp. oregano
|
|
1 clove garlic, minced
|

Instructions |
|
|
Prepare dressing by combining oil, vinegar, salt, pepper, oregano, and garlic. Refrigerate to combine flavors.

Combine all other ingredients in large salad bowl. Toss with dressing just before serving.

This is especially good with Greek Beef in Pita Pockets or Greek Chicken with Potatoes.
