Finely chop onion and jalapeño pepper. Heat (8-in./20 cm) sauté pan over medium-high heat. Add onion and jalapeño pepper; cook and stir until softened, about 5 minutes. Add eggs; cook 1-2 minutes or until soft-set. Remove from heat; add cheese and stir gently until melted
Place tortilla onto cutting board. Spoon egg mixture over tortilla. Top with salsa and roll up. Serve immediately.
