     Pickled Peaches

Ingredients
! gallon hard ripe peaches peeled
6-8 cups sugar
1 piece ginger root
2 sticks cinnamon
1 T whole allspice
1 t whole cloves
2 Cups water
3 Cups vinegar
 

Instructions
Pare hard ripe fruit, leave whole.
Boil 3 cups sugar, the spices tied in bag, water, and vinegar, 3 minutes. Add 10 or 12 peaches at a time. Simmer until tender.
Let stand in syrup 12-24 hours pack peaches into hot ball jars.
Add remaining sugar to the syrup and cook to desired thickness. Pour over peaches in jars and process in hot water bath for 5 minutes.
Serving Suggestions
This was a must pickle for Thanksgiving and Christmas dinners.
