Mix batter in a large baking pan, spread brown sugar evenly in pan and arrange pineapple on sugar filling spaces with pecans or cherries.
Sift flour, baking powder and salt together.
Beat egg yolk until light adding sugar gradually. Add pinapple juice and sifted flour. Fold in stiffy beaten egg whites. Pour batter over pineapples.
Bake in moderatley oven 375 30-45 min. once done turn upside down on cake plate.
