1/2 C. ketchup or canned diced tomatoes, for topping
Instructions
Preheat the oven to 325. In a large sauté pan on medium heat, warm the olive oil then add the vegetables (except tomatoes) and spices. Saute for 3-4 minutes until they begin to soften.
In a medium bowl, whisk together the eggs and milk; add the oats.
In a large bowl, combine the meats well by hand. Season with the salt and pepper. Pour the liquid mixture over the meats and mix thoroughly. Add the Worcestershire sauce, tomatoes and sautéed vegetables. Mix well.
Place the mixture in a 9x12 baking dish and form into a loaf. Spread the topping evenly and bake 50-60 minutes, until firm and cooked through.
Remove from oven and allow to cool for 2-3 minutes before serving.
