Bake biscuits according to package directions, cool and split.
Scramble eggs, add cheese and vegetables. Pour into greased muffin tins. Bake at 350 until firm. Remove from tin and cool.
Place 1 egg “muffin” on a biscuit, add meat and replace biscuit top. Wrap in aluminum foil and freeze.
To prepare- Thaw in refrigerator over night, bake foil wrapped biscuit at 400 for 20 minutes or unwrap biscuit, rewrap in paper towel and microwave a few minutes.
