     Lemon Meringue Pie

Ingredients
PASTRY
90g butter
1 egg
1/4 cup sugar
1 1/4 cups S.R. flour
FILLING
1 cup caster sugar
1/2 cup cornflour
 
1/2 lemon juice
1 1/4 cups water
60g butter
3 egg yolks
2 tsp lemon rind
MERINGUE
3 egg whites
1/2 caster sugar

Instructions
PASTRY Cream butter and sugar add egg and combine add flour. Turn onto floured surface and knead then roll out to fit pastry flan. Bake in Mod oven for 12 minutes or until golden brown.
FILLING Combine sugar, cornflour, lemon juice and water and stir over low heat until it thickens, add yolks, butter and lemon rind and stir until well combined. Pour over cooked pastry.
MERINGUE Beat egg whites until soft peaks form and continue beating and slowly add sugar until stiff. Spread over filling and bake in mod oven for 5 minutes or until slightly browned.
