     Sandy's Oven Roasted Brisket

Ingredients
3 Tablespoons chili powder
3 Tablespoons salt
1 Tablespoon garlic powder
1 Tablespoon onion powder
2 Tablespoons ground black pepper (coarse grind is better)
1 Tablespoon sugar
1 Tablespoon dry mustard
4 pounds beef brisket, trimmed
1 1/2 cups beef stock
 

Instructions
Preheat oven to 350degrees. Make a rub by combining the chili powder, salt, garlic and onion powders, black pepper,sugar, drymustard. Season the raw brisket on both sides with the rub. Place in a roasting pan, UNcovered for 1 hour.
After 1 hour add the beef stock and enough water to make about and 1/2 inch of liquid in the roasting pan. Lower the oven to 300degrees and cover pan tightly and continue cooking for 3 hours or until fork tender.
Cut thinly across the grain and top with the gravy from the pan.
