1 1/2 cups flour (1 cup whole wheat/1/2 cup whole wheat white)
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
3 cups oats, uncooked
1 cup raisins
1/2 cup walnuts, chopped, optional
cooking spray
Instructions
Preheat oven to 350 degrees. In a large bowl beat the butter, shortening and sugars until creamy. Add eggs and vanilla; beat well.
In a separate bowl, combine flour, baking soda, cinnamon and salt; mix well
Add the flour combination to the batter and mix well. Add oats and raisins; mix well.
Drop by rounded tablespoonfuls onto cookie sheet sprayed with cooking spray. Bake 10-12 minutes or until light golden brown in color. Cool one minute on cookie sheet, then place on wire cooling racks. Cool completely. Store tightly covered.
