6 large diced potatoes (red is very nice in this dish)
2 roma diced tomatoes
olive oil to drizzle
salt
paprika
cayenne pepper
1 heaping tablespoon of mayonnaise
green onion
Instructions
Preheat oven 425
Gently toss large diced potatoes and roma tomatoes diced in a baking dish with a drizzle of olive oil; season with salt, paprika and cayenne pepper. Bake until the potatoes are tender, about 30 - 40 minutes.
While potatoes are baking, thin a mayonnaise with water.
When potatoes are done, removed from oven and drizzle over the potatoes & tomatoes with mayo mixture and garnish with sliced green onions.
Serve immediately.
