     Yorkshire Pudding

Ingredients
Shortening enough to dap each muffin cup
1 cup milk - must be at room temp
3/4 cup flour
3 eggs - must be at room temp
1 teaspoon salt
 

Instructions
Preheat oven 400F
In a very large measuring cup with nice pouring spout, beat eggs really well. Add milk, salt and flour and beat with electric mixer for a minute. Set aside
Prepare the muffin pan as follows; put a dap of shortening in each muffin pan, place into hot oven. Watch (takes about 3 - 4 minutes) and when the pan is hot (the shortening will start to smoke) remove from the oven and pour the beaten mixture into each muffin cup about half full. Bake for 10 min then reduce heat to 375F for the last 15 minutes.
Serving Suggestions
Serve immediately with any roast beef dinner with gravy.
