     Pumpkin Roll

Ingredients
3 eggs
3/4 cup sugar
3/4 cup flour
2/3 cup pumpkin
1 tsp soda
2 T cinn
1 cup conf sugar
8 oz cream cheese
4 T butter - softened
 
1 tsp vanilla

Instructions
Beat eggs, then mix in next five ingred. Pour onto a jellyroll pan lined with Pam sprayed, waxed paper or parchment paper. Bake 15 to 20 min at 375. Filling - Mix remaining four ingred together.
Put a dish towel on counter. Cover with at least two sheets long of paper towel. Sprinkle with conf sugar. Flip cake onto paper towel. Roll up jellyroll style. Let cool 15 min. Unroll. Spread filling on cake, reroll and wrap in plastic wrap. Refrigerate overnight for best results.
