     Bahamian Macaroni and Cheese

Ingredients
1 -8 ounce pkg. elbow macaroni
1 onion, chopped
1 sweet pepper, chopped
2 cups cheddar cheese, grated
1 can evaporated mink
1 eggs, beaten
salt and hot pepper to taste
dash of paprika
 

Instructions
Boil macaroni until tender, add chopped onions and peppers to water to soften. Drain
Add half of cheese and stir over low heat until melted.
Stir in evaporated milk and eggs. Add seasonings.
Put into a well greased casserole dish or baking pan. Sprinkle remaining cheese evenly over top. Bake 350 degrees for 20 minutes or until mixture has set. Remove and let stand for 10 minutes. Cut into squares.
