     Hot and Sour Mandarin Soup

Ingredients
8 cups soup stock, boiling
1/4 cup lean pork, shredded
2 dried black mushrooms, soaked and shredded
2-3 dried wood ears, soaked and shredded (optional)
2-3 slices ginger

1/2 square tofu cut into 1/4x1/4x2 inch strips
1/4 cup bamboo shoots, shredded
2 T. mushrooms, sliced
 
1 slice cooked ham, shredded (optional)
1/2 cup vinegar (or more)
1 tsp. sesame oil
1 tsp. white pepper (or more)
3/4 tsp. sugar
2 T. dark soy sauce
1 tsp. chili oil (optional)(or more) ---------------
4 T. cornstarch in 3 T. cold water
2 eggs, lightly beaten

Instructions
Cook first 5 ingredients for 2-3 minutes; discard ginger. Add rest of ingredients except for conrnstarch and eggs. Simmer 2 minutes.
Add cornstarch mixture, stirring until thickened and clear. Remove from heat and slowly stir in the eggs.
Options- Try adding bok choy, dry shitake, chicken or shrimp.
Serving Suggestions
Garnish with shredded green onions.If soup prepared ahead, do not add cornstarch or eggs until serving time. Soup should be quite hot and sour.
