     Salmon w/ Dijon Sauce

Ingredients
3/4 lb. salmon filet
1/2 tbsp. butter
1/4 c. reduced-sodium chicken broth
1/4 c. half & half or light cream
1 tbsp. Dijon mustard
1/2 tsp. ground black pepper
 

Instructions
Slice the salmon into about 1 1/2 inch strips. Heat a tsp. of olive oil and cook salmon, not not all the way.
In a saucepan heat the other ingredients up and allow to gain some thickness.
Add the salmon and finish cooking with the sauce.
Serving Suggestions
oven-roasted red potatoes w/olive oil & spices, asparagus
