     Healthy Morning Muffins

Ingredients
1 1/4 cups flour
1/2 cup brown sugar
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp nutmeg
1/2 tsp salt
1 cup rolled oates
1/2 cup raisins
3 tbsp extra virgin olive oil
 
1 egg
1/2 cup skim milk
4 medium carrots shredded
1 medium banana mashed

Instructions
Preheat oven to 400 degrees Coat 12 cup muffin tin with cooking spray In a large bowl, whisk flour, sugar, soda, powder, nutmeg, and salt Stir in oats and raisins Stir in oil, egg, milk, carrots, and banana Fill each muffin cup with 1/2 cup batter Bake 22-25 minutes or until muffins test done
