     Spicy Peanut Noodles with Shrimp

Ingredients
For the Sauce-
1/3 c creamy peanut butter
1/4 to 1/3 cup water
2 Tbsp low-soium soy sauce
1-2 tsp chile paste with garlic
1/2 tsp sugar
1/4 tsp salt
1 lb shrimp, peeled and deveined
 
For the pasta-
8 oz uncooked thick udon noodles or linguine
1 red bell pepper, cut into julienne strips
3/4 cup chopped, seeded cucumber
1/4 c diagonally sliced green onion
3 Tbsp chopped roasted peanuts
2 Tbsp cilantro leaves
4 lime wedges (optional)

Instructions
Cook noodles according to package directions, omitting salt and fat. While noodles cook, prepare peanut sauce. Combine first 7 ingredients, stir with a whisk.
To prepare shrimp, toss shrimp with 1/4 tsp salt. Saute in a nonstick skillet, coated with cooking spray over medium-high heat 3 minutes on each side or until done.
To prepare pasta, combine peanut sauce, shrimp, noodles, bell pepper, cucumber and onions, toss well. Sprinkle with peanuts and cilantro. Serve with lime wedges, if desired.
