     Foil Pack Bruschetta Chicken Bake

Ingredients
1 can (28 oz) diced tomates, drained
1 pkg (6oz) stove top stuffing mix for chicken
2 cloves garlic, minced
6 small boneless skinless chicken breast halves (1 1/2 lb)
1 tsp dried basil leaves
1 cup 2% milk shredded mozzarella cheese
 

Instructions
Heat oven to 400 degrees. Combine tomates, stuffing mix and garlic until stuffing mix is moistened.
Place 1 chicken breast on center of each of 6 large sheets of heavy duty foil sprayed with cooking spray; top with basil, stuffing mixture and cheese. Bring up foil sides; double fold top and ends to seal each packet, leaving room for heat circulation inside. Place in 15x10x1 inch pan.
Bake 30 to 35 minutes or until chicken is done (165 degrees F). Cool 5 minutes. Cut slits in foil to release steam before opening packets.
