1 head cauliflower (about 4 pounds) cut into florets
1 large onion, chopped
1/2 cup olive oil
2 tablespoons good quality red wine vinegar
3 1/2 teaspoons curry powder
1 3/4 teaspoons salt
1 teaspoon ground cardamom
1 teaspoon ground cumin
paprika
fresh cilantro (optional)
Instructions
Preheat oven to 450 degrees.
Place cauliflower and onion in a 9 X 13 inch
baking dish.
Combine oil, vinegar, curry powder, salt, cardamom
and cumin in a small bowl. Pour over vegetables.
Stir to coat. Sprinkle with paprika.
Roast 35 minutes, stirring occasionally. Sprinkle
with cilantro before serving if desired.
