Put Shrimp in large mixing bowl. Dice and chop onion, peppers, cilantro and tomato. Gently stir ingredients together.
Slice limes in half and squeeze juice over mixture. If you have a juicer you may only need 5-7 limes. Gently stir Ceviche until well coated with lime juice. Cover and refrigerate at least 20 mins.
Serve with Tortilla chips.
