     Shrimp Saute' with Oranges and Grapefruit

Ingredients
1 pound large shrimp, peeled and deveined
1 teaspoon smoked paprika
1/2 tspn favorite seasoning blend
Black pepper to taste
1 tbspn canola ooil
1-1/2 cup red grapefruit segments
1-1/2 cara cara, mineola or clementine segments
6 to 8 torn escarole or romaine
3/4 cup orange or tangerine juice mixed with 1 teaspoon cornstarch
 
1-1/2 cups cooked pearl (Israeli) couscous

Instructions
Place the shrimp in a large bowl and sprinkle with smoked paprika,seasoning blend and black pepper. Toss to coat the shrimp with the seasons.
In a large skillet, heat the oil. Add the shrimp and saute' until they just rurn opaque. Add the segmented citrus and cook about 2 minutes more.
Remove the shrimp an dcitru to a plate and keep warm. In the same skillet, add the escarole and saute' briefly about 2 mins to just wilt slightly and warm.
Transfer to individual serving bowls or plates. Add orange juice mixture to the skillet and bring to a boil; cook 2 mins or until it slightly thickens.
Serving Suggestions
Top the greens with some couscous and then shrimp. Pour the warmed sauce over each serving.
