     Garlic Pork Roast with Roasted Potatoes

Ingredients
4lbs. boneless pork loin or tenderloin
medley fingerling potatoes
1 handfull peeling garlic cloves
1 1/2t. seasoned salt
1 1/2T. crushed, dried oregano leaves
1 1/2T. black pepper
1 1/2t. chili powder
2 1/4T. minced garlic
3/4t. red pepper flakes
 
1 1/2t. ground cumin

Instructions
Heat oven to 350F. Blend all seasonings and rub 2/3 (reserving some for potatoes) of it over all sides of roast.
Add olive oil to remaining seasoning and cover halved potatoes and garlic cloves.
Place roast in a shallow roasting pan and surround it with potatoes and garlic. Roast until meat thermometer inserted in roast reads 160F (about 60 to 90 min).
Remove pork from oven and let rest 10 min before slicing.
Serving Suggestions
It's a meal in one pan... saute some green beans if necessary
