     Pesto-Mushroom Chicken

Ingredients
4 Split Breast Chicken
Onion
Scallions
Mushrooms
Garlic
Lemon
Pesto
Fish Sauce
Sesame oil
 
Salt
Pepper
Olive Oil
cilantro

Instructions
Prep the following ingredients- -Chop 1/4 cup of onions, scallions, and 1 Tbs of garlic. - Chop a handful of mushrooms In a small bowl, mix the following together- -1 Tbs of pesto paste -1/4 cup of fish sauce -1 Tbs of Sesame oil -1/2 finely chopped Cilantro
Heat 1 Tbs olive oil in pan right as high as possible burning it starts to smoke. Place chicken in hot pan and fry until the skin is nice and brown. The trick is to cook it fast and as hot as possible without burning or smoking. This locks in the juices. While the chicken is cooking, heat the oven, with your baking dish, to 400 degrees.
Once the chicken has a brown outer color, remove from pan and place in the heated baking dish. Using the same frying pan, with the oil, put in the onions, scallions, and garlic. Simmer on med heat for a few minutes until the onions are clear. Careful not to burn the garlic. Then put the pesto mixture and mushrooms in and simmer on med high heat for 5-8 min. Take the mixture and pour over the chicken in the baking dish and bake for another 15-20 min. Don't over cook or the chicken will become dry.
Remove dish with chicken and drizzle the juice from the baking dish over the chicken.
Serving Suggestions
Serve with steamed veggies, or brown rice.
