     Spinach and Tomatoes with Feta

Ingredients
1 Tbl extra virgin olive oil
1/2 tsp crushed garlic
1 bag (12 ozs) fresh baby spinach
1/2 can (7.50 ozs) petite diced tomatoes, drained
1 tsp lemon juice
2 ozs crumbled feta cheese
 

Instructions
In large skillet, heat oil over medium heat. Add garlic and swirl around pan. Add spinach and cook until almost wilted, using tongs to turn occasionally.
Add drained tomatoes and wilt spinach completely. Transfer to a serving bowl and stir in lemon juice. Top with crumbled feta cheese. Serve immediately.
