     Hot Cider Dressing

Ingredients
6 slices bacon diced
2-3 shallots, thinly sliced
1/3 c apple juice concentrate
3 T cider vinegar
2 t brown sugar
freshly ground pepper
 

Instructions
Saute bacon until crisp. Transfer to paper towels to drain. Pour off all but 2 T bacon fat from pan. Add shallots and cook until golden brown. Add concentrate, vinegar and sugar. Simmer 1 min. Season to taste with pepper. Pour over mixed greens while hot.
Excellent with raw spinach or a spring greens mix. In the winter I like to add pomegranate seeds for additional flavor and crunch.
