     Filet of Sole with Dijon Caper Sauce

Ingredients
1 pound sole or flounder filets
1/2 cup chicken broth
2 tablespoonfuls dijon mustard
1 teaspoonful dried thyme
1 teaspoonful fresh cracked pepper
2 tablespoonfuls capers
 

Instructions
Combine chicken broth, mustard, thyme and pepper in saucepan. Simmer over low-medium heat approximately 5 minutes. Add flounder filets and continue to cook approximately 6 minutes until fish is cooked through. Add capers.
Serve flounder immediately and top with dijon caper sauce.
