     Black Bean Lasagna

Ingredients
2 cans Black Beans
1 can Rotel
2 cans diced tomatoes
1/4 cup Chili Powder
Tsp Cumin
Salt
1 onion
3 cloves Garlic
Carton of Cottage Cheese
 
1 to 2 Eggs
Shredded Montery Jack
2 Tbsp fresh chopped Cilantro
Lasagna Noodles

Instructions
Saute onion and garlic together. Combine Black Beans, Rotel, Tomatoes, Tomato Sauce, Chili Powder, Cumin and salt. Cook for 45 minutes or until well blended.
Combine Cottage Cheese, Eggs, Monterey JAck and Cilantro.
Layer - Sauce on bottom, 3 uncooked Lasagna Noodles, Cheese Mixture - Repeat.
Bake 1 hour and 15 minutes at 350.
