     Spanish Class Chicken

Ingredients
6 boneless, skinless chicken breast halves
1 T vegetable oil
1 medium onion, thinly sliced
1 t dried oregano leaves
2 T capers
1/2 t salt
1/4 t pepper
12 pitted green olives
4 medium tomatoes, chopped (3 cups)
 
2 med stalks celery, chopped (1 cup)
2 cloves garlic, finely chopped
2 bay leaves
3 cups sliced mushrooms (8 oz)

Instructions
Heat oil in 10-inch skillet over medium heat. Cook chicken and onion in oil, turning once, until juice of chicken is no longer pink when centers of thickest pieces are cut.
Stir in remaining ingredients. Heat to boiling; reduce heat to low. Simmer uncovered 10 to 15 minutes.
Discard bay leaves before serving.
