     Chicken with Red Bell Peppers

Ingredients
1/4 cup Olive Oil
4 Large Red Bell Peppers
2 Garlic cloves, minced
Salt
Red Pepper
A lot of Basil
4 small skinless boneless chicken breasts OR 4 large boneless, skinless chicken thighs
 

Instructions
Marinate chicken in olive oil, basil, garlic and red pepper for four hours. If you want to go crazy healthy, consider replacing olive oil with coconut oil. Coconut oil is the only oil found in nature that the body processes as a carbohydrate and not as a fat. Also, you can cut the oil down by halving the olive oil with vinegar.
Pre heat oven to 350 degrees. Brush the inside of the bell peppers with olive oil.
Stand peppers up on a baking sheet. Salt chicken and roll up (jelly roll style). Stuff into red bell peppers.
Bake in preheated oven for 45 minutes or until juices run clear when pierced with a fork.

Yummy with wild rice
