Cut potatoes on the fry press and par fry the slices for 2 minutes at 300 degrees.
Take the par fried potatoes and freeze them. A couple hours prior to using the fries, move them to the cooler.
If cooking from a cooled point, cook at 350 degrees for 2 to 3 minutes or until lightly brown and crisp. If cooking from a frozen standpoint, they may take a bit longer, but make sure that you shake the basket more often.
