     Artichoke and Parmesan Spread

Ingredients
2 (14 oz) cans of artichokes
1/2 cup fresh flat leafed parsley
1 cup grated Parmesan
3 tbs extra virgin olive oil
1/4 tsp salt
1/4 tsp pepper
Serve with- Large Crackers
 

Instructions
Drain and rinse artichokes. Cut artichokes into large pieces. Combine artichokes with parsley, parmesan, oil, salt, and pepper in a medium bowl.
