Preheat 350; whisk together peanut butter/maple syrup/vinegar/vanilla in bowl. In separate bowl, sift flour and baking soda. Stir/whisk well. Add oats and choc chips; stir well. Combine wet/dry ingredients; stir to evenly coat.
Grease cookie sheet; scoop out batter and form a ball. Leave 2 inches between each ball; bake for 8-10 mins. They will start to brown on bottom.
