     Blueberry Oatmeal Muffins

Ingredients
5/3 cup quick cooing oats
2/3 cup all purpose flour
1/2 cup whole wheat flour
3/4 cup packed light brown sugar
2 tsp ground cinnamon
1 tsp baking powder
1 tsp baking soda
3/4 tsp salt
1½ cup buttermilk
 
1/4 cup canola oil
2 tsp grated lemon rind
2 large eggs
2 c frozen strawberries
2 tbs all purpose flour
cooking spray
2 tbs granulated sugar

Instructions
Preheat oven to 400.
Place oats in a food processor; pulse 5 to 6 times until oats resmble coarse meal and place in large bowl. Add flours through salt to oats in bowl; stir well with a whisk. Make a well in center of mixture. Combine buttermilk, oil, rind, and eggs in small bowl and stir well with whisk. Add flour mixture with stirring until moist.Toss berries with 2 tbs of flour, and gently fold them into batter.
Seperate batter into 16 muffin cups sprayed with cooking spray; sprinke batter with 2 tbs of sugar. Bake for 20 min or until muffins spring back when touched in center. Remove from pans immediately and let cool.
Serving Suggestions
room temperature or warm
