     Peppermint Puffs

Ingredients
2 cup all purpose flour
1/4 tsp salt
1/2 cup unsalted butter at room temperature
1 cup confectioners sugar
1 egg
12 tsp peppermint extract
1/2 tsp vanilla extract
4 oz white chocolat, melted with 1/2 tsp shortening
1/2 cup crushed candy canes or peppermints
 

Instructions
Stir together flour and salt and set aside. Beat butter and sugar in a large bowl with an electric mixer until smooth and fluffy. Beat in egg, peppermint extract, and vanilla. Beat in flour mixture on low speed just until blended. Shape dough into a ball, wrap in plastic and refrigerate 1 hr.
Preheat ove to 375. Coat baking sheet with nonstick cooking spray or line with parchment paper. Shape dough into 1 inch balls and place on baking sheets
Bake 10 to 12 min or until bottoms are lightly browned. Let cool
Brush or spoon white chocolate on tops of cookies. Dip tops in crushed peppermint. Place on wax paper or racks until hardened.
