Ingredients
12 (3oz) pieces white veal
salt and white pepper, to taste
1/4 pound butter
1 c flour
1 lb fresh lump crabmeat
1 pint hollandaise sauce
12 asparagus spears
 

Instructions
Salt and pepper veal, dredge in flour and saute in butter for about one minute, on each side. Arrange two pieces of veal on each plate and top with hot crabmeat, which has been heated and two asparagus spears, one on each side of meat. Smooth Hollandaise on crabmeat.
